Barley Pilaf With Mushrooms |

found this in an old news paper and tried it last winter.. it has become my favorite comfort food! Ingredients:
ingredients |
1 tbs. plus 1 tsp. olive oil |
2 cups onion, chopped |
1/2 lb. mushrooms, thinly sliced |
1 bay leaf |
1 cup pearl barley |
2 cups chicken or vegetable broth |
3 tbs. fresh parsley, minced |
Directions:
1. Heat oil in a heavy saucepan over medium heat. Sauté onion, 2. mushrooms and bay leaf 5 minutes, stirring, until onion is 3. softened. Stir in barley, water and salt and pepper to taste. Bring to 4. a boil. Reduce heat to low, cover pan and simmer 30-35 minutes, or 5. until liquid is absorbed and barley is tender. Discard bay leaf and 6. stir in parsley. Fluff with a fork before serving |
