A nice change of pace from rice or noodles. A very quick and easy side dish. Ingredients:
1 cup quick-cooking barley |
2 tablespoons butter |
2 cups chicken broth |
Directions:
1. Melt butter in a saucepan. 2. Add barley and stir until coated with butter. 3. Add chicken broth and bring to a boil. Cover. Turn heat to simmer and cook 10-12 minutes or until barley is tender and liquid is absorbed. Remove from heat and let stand 5 minutes. |
