From the American Dietetic Association's Healthy Cooking Across America . Ingredients:
1 teaspoon sesame oil |
1 medium onion, chopped |
14 ounces chicken broth |
1 cup barley (quick cooking) |
10 ounces frozen peas and carrots, thawed |
2 tablespoons chopped fresh parsley (optional) |
Directions:
1. Heat oil over medium heat. Add onion; saute 3-5 minutes or until translucent. Raise heat; add broth and bring to a boil. Add barley; cover, lower heat and simmer 10 minutes. 2. Remove from heat. Stir in veges. cover and let stand 5 minutes. Top with parsley just before serving. |
