BARLEY OAT CRACKERS DATED 1972 This recipe came from an estate sale. I obtained it when I purchased the family collection from the Parnell Estate in Canton, Texas in 1988.
Ingredients:
1-1/2 cups rolled oats
1-1/2 cups barley flour
1/2 teaspoon salt
1/8 teaspoon baking soda
1/2 cup vegetable shortening
1 tablespoon honey
1/2 cup warm water
Directions:
1. Preheat oven to 350.
2. Grind oats in blender to a fairly fine consistency.
3. In large bowl or in food processor mix oats with flour, salt and baking soda.
4. Cut in shortening until mixture resembles coarse meal.
5. In small bowl dissolve honey in warm water.
6. Slowly blend sweetened water into flour mixture until dough holds together in a cohesive ball.
7. Divide dough into 2 equal portions for rolling.
8. On a floured surface or pastry cloth then roll thin.
9. Cut out 2 crackers with a cookie cutter and arrange on lightly greased baking sheet.
10. With tines of a fork prick each cracker 2 or 3 times then bake 10 minutes.
11. Turn crackers over and bake 10 minutes or until very lightly browned.
12. Cool the crackers on a rack.
