Serve this instead of potatoes or rice. Ingredients:
1/4 cup butter |
1/2 cup chopped onion |
1/2 cup sliced mushrooms |
1 cup pearl barley or 1 cup pot barley |
1/3 cup sliced almonds |
1/4 cup sliced green onion |
1/4 teaspoon salt |
1/4 teaspoon pepper |
3 beef bouillon cubes |
3 cups boiling water |
Directions:
1. Melt butter in fry pan. 2. Add onions, mushrooms and barley. 3. Saute until lightly browned. 4. Put into greased 1 1/2 quart casserole. 5. Add almonds, green onion, salt and pepper. 6. Dissolve Oxo cubes in boiling water. 7. Add to casserole. 8. Stir to mix well. 9. Cover and bake in 350 degree oven for 1 1/2 hours or until barley is tender. |
