Barley Beef and Kale Soup |

With the cold ontario weather coming soon I am preparing some soups ahead of time for fast meals. I froze this soup in individual portions for a quick meal for work. Great healthy and hearty dish. Ingredients:
1 tablespoon oil |
1 chopped onion |
1 lb diced stewing beef |
1/2 lb sliced mushrooms |
3 cups beef broth |
1 cup red wine |
1/2 cup barley |
3 shredded carrots |
1 cup chopped celery |
1 teaspoon thyme |
1/2 teaspoon salt |
1 cup chopped kale |
Directions:
1. Heat oil in heavy saucepan over medium heat. 2. Add onion, stewing beef and mushrooms. 3. Cook until meat is well browned. 4. Add beef broth, red wine, barley, carrots and celery, thyme and salt and bring to boil. 5. Reduce heat, cover and simmer 1 hour or until barley and meat are almost tender. 6. Add kale. 7. Cover and cook 5-10 minutes more or until kale is cooked. |
