Hearty, healthy and good for low glycemic dieters. A good way to use up prepared barley. Ingredients:
2 cups barley |
1 1/2 cups (a 15 oz. can) white kidney beans |
1 cup diced celery |
1 cup cherry tomatoes, quartered |
2/3 cup chopped vidalia onion |
3 tbsp. mayo |
1 tbsp. curry powder |
Directions:
1. Put first 5 ingredients into bowl. Blend mayo and curry together and add to ingredients. Mix well. |
