Barley And Three Bean Soup |

Easy and delicious soup. Ingredients:
1 tblsp. olive oil |
2 small onions, cut in half and thinly sliced |
2 cloves garlic, finely chopped |
1 tsp. ground cumin |
1 15 oz can garbanzo beans, undrained |
1 can 15 oz. lima beans, drained |
1 can 15 oz. black beans, rinsed and drained |
1 can 14 1/2 oz. italian style stewed tomatoes undrained |
1/2 cup uncooked quick cooking barley |
1/2 tsp. salt |
3 cups water |
2 tablespoons choped fresh parsley |
Directions:
1. Heat oil in Dutch oven over medium high heat. 2. Cook onions, garlic and cum in oil 4 to 5 minutes, stirring occasionally, until onions are tender. 3. Stir in remaining ingredients except parsley. 4. Heat to boiling, reduce heat to low. Cover and simmer about 10 minutes or untl lima beans are tender. 5. Stir in parsley. 6. Enjoy! |
