Precooked rice, preshredded cheese, and preshredded lettuce are all great time-savers. Ingredients:
1 pound ground sirloin |
1/2 cup chopped onion |
1/2 cup chopped green bell pepper |
1 (8 3/4-ounce) can no-salt-added whole-kernel corn, drained |
1 (4.4-ounce) package precooked brown rice |
1 cup salsa |
1/2 teaspoon coarsely ground black pepper |
4 cups shredded iceberg lettuce |
1/4 cup (1 ounce) reduced-fat shredded cheddar cheese |
1/4 cup reduced-fat sour cream |
Directions:
1. Cook first 3 ingredients in a large nonstick skillet over medium-high heat until browned, stirring to crumble beef. (Drain if necessary, and return to pan.) Stir in corn and next 3 ingredients. Cook 2 minutes until thoroughly heated, stirring frequently 2. Divide lettuce evenly among plates. Top with beef mixture, cheese, and sour cream. |
