Barber's Chewy Vanilla & Salted Butter Toffee |

A recipe by James Barber.... A sticky,sweet treat that will appeal to the kid in all of us... Perfect for the holiday cookie platter. Ingredients:
2 1/4 cups icing sugar |
1/2 cup milk |
1/4 cup corn syrup |
1 vanilla bean, split |
3/4 cup salted butter |
Directions:
1. Butter a loaf pan. 2. In a pot,combine icing sugar, milk, corn syrup and vanilla bean. 3. Bring to a boil over high heat, stirring with a wooden spoon. Reduce heat and simmer 5 minutes. 4. Remove vanilla bean. 5. Gradually stir in butter. 6. Cook stirring frequently, until temperature reaches 230 F.(110 C.) on a candy thermometer. 7. Pour into loaf pan and cool at room temperature for at least 2 hours before cutting into 18 pieces. 8. Wrap caramels with plastic wrap or parchment paper. Do not use waxed paper as it will stick to the caramels. |
