From my collection of handwritten recipes. Note: Sprinkle mesquite chips or apple branches on the coals to add more zest to your barbeque. Ingredients:
2 lbs halibut fillets |
1/2 cup butter |
1 lemon, juice of |
1 teaspoon dill |
1 teaspoon pepper |
2 garlic cloves, minced |
1 tablespoon parsley, chopped |
Directions:
1. Pat halibut dry with paper towels. Melt butter and stir in lemon juice, dill, pepper, minced garlic and parsley. Wrap fillet and butter mixture tightly in aluminum foil. Place on rack over hot coals and grill for 10-12 minutes, depending on the thickness of the fish. Spoon butter sauce over each serving. |
