This is from the November/December issue of Quick Cooking and my husband, who is not usually a meatball fan, absolutely loves these. I've made them more times than I can count for our family and for guests. Ingredients:
1 egg, lightly beaten |
1 (5 ounce) can evaporated milk |
1 cup quick-cooking oats |
1/2 cup finely chopped onion |
1 teaspoon salt |
1 teaspoon chili powder |
1/4 teaspoon garlic powder |
1/4 teaspoon pepper |
1 1/2 lbs ground beef |
1 cup ketchup |
3/4 cup packed brown sugar |
1/4 cup chopped onion |
1/2 teaspoon liquid smoke (optional) |
1/4 teaspoon garlic powder |
Directions:
1. In a bowl, combine the first eight ingredients. 2. Crumble beef over mixture and mix well. 3. Shape into 1 balls. 4. Place in a greased 13 X 9 X 2 baking dish. 5. Bake, uncovered, at 350 for 18 - 20 minutes or until meat is no longer pink. 6. Meanwhile, combine the sauce ingredients in a saucepan. Bring to a boil. 7. Reduce heat and simmer for 2 minutes, stirring frequently. 8. Pour over meatballs. 9. Bake 10 - 12 minutes longer. |
