Barbecued Garlic and Herb Mushrooms |

I love mushrooms and this recipe from Super Food Ideas looks really good and fresh - just the thing for the summer barbecue. Ingredients:
2 tablespoons extra virgin olive oil |
2 garlic cloves (minced) |
1 teaspoon thyme (fresh leaves chopped finely) |
1 teaspoon rosemary (fresh leaves finely chopped) |
4 (150 g) mushrooms (large flats) |
1 lemon (cut into wedges to serve) |
Directions:
1. Preheat a barbecue chargrill on medium high heat. 2. Combine oil, garlic, thyme and rosemary in a bowl and season with salt and pepper and then brush mushrooms with olive mixture. 3. Barbecue mushrooms for 6 to 8 minutes, turning halfway during cooking, or until charred and just tender and then transfer to a serving plate and serve with lemon wedges. |
