It is that time of the year again when we sacrifice large quantities of meat to the BBQ gods this is for the ones that want something a little different. Ingredients:
egg plant cut into 1/2 rounds (par boiled |
olive oil |
parmesan cheese |
Directions:
1. Wash and cut your egg plant into 1/2” rounds 2. Partially boil the egg plant to soften - do not over cook you do not want them to turn to mush. 3. Pat dry and brush with olive oil. 4. Grill on the BBQ and sprinkle with cheese as you grill them. |
