malaysian no1 barbecued Ingredients:

1kilo meat,chilled and cut into thin pieces. |
10 shallots. |
2 cloves garlic. |
1/2 teaspoon tumeric powder or 1/4 thumb sized tumeric. |
2 stalks lemon grass, sliced. |
2 slices galangal. |
2 tablespoons corianders seeds. |
2 teaspoons cumin. |
1 teaspoon dark soya sauce. |
1 teaspoon salt. |
4-5 tablespoons sugar. |
4 tablespoons oil. |
peanut sauce |
15 shallots. |
8 cloves garlic. |
2 stalks lemon grass, thinly sliced. |
20-30 dried chillies,deseeded or 5 tablespoons chilli paste. |
4 thin slices galangal. |
1 tablespoon salt. |
5-8 tablespoons sugar. |
4 tablespoons lime juice. |
500 g roasted ground peanuts,pounded. |
225 ml oil. |
900 ml water. |
garnish |
2 cucumber,cut into wedges |
2 onions,cut into wedges |
Directions:
1. Meat preparation: 2. pound shallots,garlic and tumeric to a smooth paste. 3. rub all paste mixture into the beef.sprinkle the coriander and cumin powder over the beef mix thoroughly.marinate beef for 1hour. 4. thread seasoned meat on to metal skewers,grill over charcoal fire or under hot grill.baste with oil and water mixtures to keep beef moist. 5. Peanut sauce: 6. pound shallots,lemon grass,dried chillies&galangal to a fine paste. 7. heat oil in wok and fry pounded paste till fragrant and oil seeps through the paste. 8. add 900ml water£ed ground peanut, 9. add sugar,salt,lime juice&tamarind water. 10. boil over low heat till thick.stir constsntly for 1/2 hour,set aside. 11. serve cool peanut souce with barbecued beef and garnish. |
