Barbecued Beef and Potato Casserole |

This is down home cooking! I love barbecue sauce, so this is a favorite of mine. I also think I use way more cheese than listed (cheese is my downfall!) Ingredients:
2 tablespoons olive oil |
1 onion, chopped |
3 garlic cloves, chopped |
2 green peppers, seeded and chopped |
8 green onions, thinly sliced |
1 lb lean ground beef |
2 tomatoes, chopped |
1 cup barbecue sauce |
4 large baking potatoes, thinly sliced |
1 cup cheddar cheese, shredded |
Directions:
1. Heat oil in non-stick skillet. 2. Add onion, garlic, peppers and green onions, and cook until onion is starting to brown. 3. Add ground beef and cook, stirring occasionally until cooked through. 4. Add tomatoes and season with salt and pepper. 5. Add barbecue sauce and cook until all is well-coated. Remove from heat. 6. Preheat oven to 350ºF. 7. Spray a large baking pan with cooking spray. 8. Arrange alternate layers of potatoes, beef mixture, and cheese, ending with potatoes. (reserve 1/4 cup cheese). 9. Cover with foil and bake 40 minutes. 10. Uncover and top with remaining cheese. 11. Bake, uncovered, until potatoes are cooked through, about 15 minutes more. 12. Serve immediately. |
