I wanted to make barbecue chicken in my crock pot but I forgot that one needs a lot of liquid when cooking in a crock pot, so it ended up being soup. It was still very tasty though; my two little ones ate it like it was going out of style. Ingredients:
boneless chicken thighs (several) |
one can of chicken noodle soup (preferably progresso 50% reduced sodium) |
dried seasonings -- onion, garlic, paprika, rosemary, parsley, oregano, basil, mint, sage thyme |
coarse sea salt |
water (or chicken broth) |
barbecue sauce |
Directions:
1. place chicken in slow cooker. 2. season liberally with all of the seasonings. 3. add the can of soup, along with three or four cans of liquid (either water or broth). 4. cover and cook on high for four hours. 5. during the last hour, add at least half a bottle of barbecue sauce. 6. enjoy the soup. |
