For Chicken legs (4 legs) use half a recipe of Barbecue sauce; for whole chicken (3lb) use one recipe of Barbecue rub. Ingredients:
1/4 cup brown sugar, packed |
2 tablespoons chili powder |
2 tablespoons paprika |
1 tablespoon ground cumin |
1 teaspoon cayenne pepper |
1 tablespoon garlic powder |
2 teaspoons salt |
1 teaspoon pepper |
Directions:
1. Mix all ingredients. Store in an airtight container until needed. 2. Coat chicken generously with rub and roast or grill. 3. GRILL: Preheat barbecue to high. Grill chicken for two minutes per side. To complete cooking, place chicken to one side of the grill, away from direct heat (if using gas BBQ, turn off heat source beneath chicken and reduce heat on other side to medium). 4. Cook covered for 30-35 minutes turning often. When a thermometer inserted into the thigh part of the leg reads 170F remove chicken and serve. 5. NOTE: Throw out any leftover rub that has come in contact with raw chicken. |
