We eat fish (usually fried or grilled) once a week. I don't remember where I found this recipe...I think maybe Southern living, but I adjusted it just a bit. We all liked it for a change of pace from the usual. Ingredients:
4 -6 catfish fillets |
1/4 cup ketchup |
1/4 cup barbecue sauce |
1/2 teaspoon jamaican jerk spice |
1/4 cup margarine |
2 teaspoons balsamic vinegar |
2 teaspoons worcestershire sauce |
1/2 teaspoon dijon mustard |
1 clove garlic, minced |
1/8 teaspoon dried tarragon |
some cracked black pepper |
Directions:
1. Preheat oven to 400 degrees F. 2. Rinse fillets and arrange in a lightly-greased 9 x 13-inch pan. 3. Melt margarine in a saucepan. 4. Add all of the remaining ingredients to the melted margarine. 5. Mix well and stir occasionally for 5-10 minutes. 6. Pour mixture over fish fillets. 7. Bake 15-18 minutes until fish flakes easily. |
