Barbara's Cornbread in Cast Iron |

Cornbread baked in a cast iron skillet. Ingredients:
1 cup cornmeal |
1 cup flour |
2 tbsp. splenda |
1 tsp. salt |
1 1/2 tsp. baking powder |
1/4 cup egg substitute |
1/2 cup buttermilk, 1% fat |
1/2 cup skim milk |
2 tbsp. smart balance, separated and melted |
Directions:
1. Preheat the oven to 450 degrees, and preheat one ten inch cast iron skillet. 2. Combine in a large mixing bowl the cornmeal, flour, Splenda, salt and baking powder. In a separate bowl mix the egg substitute, buttermilk, skim mild, and 1 tbsp. melted Smart Balance. 3. Gently fold the wet into the dry mixture. 4. Brush the preheated skillet with one tbsp. of Smart Balance, and immediately pour the batter into the skillet, approximately three-fourths of the way up. 5. Bake for 25 minutes or until edges are firm and golden brown. 6. (Note: can also add one small can diced green chilies, and 1 cup shredded Cheddar Cheese, and even one small can of whole kernal corn). |
