This is just a simple roast chicken recipe. From Christmas: a Cook's Tour, Ingredients:
1 (4 -5 lb) whole chickens |
1 lemon, cut in quarters |
salt and pepper |
4 tablespoons butter, softened |
1/2 teaspoon ground red pepper |
1 garlic clove, crushed |
1/2 teaspoon ground coriander |
Directions:
1. Preheat oven to 450°. 2. Rub chicken all over with lemon pieces. Put lemon pieces inside chicken cavity. 3. Rub chicken with salt and pepper. 4. Combine butter, red pepper, garlic and coriander. Smear over the chicken. 5. Roast for 15 minutes. Reduce oven temperature to 375° and roast until juices run clear, approximately 1-1 1/2 hours. |
