Barbados Coconut Loaf

if you can't find fresh coconut use a good quality natural coconut found in natural foods or health food stores for this tasty coconut loaf Source: friend
Ingredients:
2 1/2 cup grated fresh coconut
1/2 cup melted butter
4 cups flour
1 tbs baking powder
1 tsp salt
3/4 cup sugar
1 cup raisins, light or dark or a combo
1 egg fork beaten
1 1/4 cup evaporated milk
1 tsp almond flavor
glaze: mix together
1 tbs water
2 tbs sugar
Directions:
1. Combine coconut, butter, flour, b.p., salt, sugar and raisns to combine well
2. Mix egg, milk and extract
3. Combine all together to make a firm dough
4. Divide into 2 greased and floured loaf pans
5. Brush top of dough with glaze
6. Bake in center oven at 350F about an hour or tested done in center
7. Cool in pans and remove
