Different spin on beef stew, an islander's delight, goes great served over rice. Ingredients:
4lbs lean boneless chuck |
1/4 c extra virgin olive oil |
4t flour |
2 large diced tomatoes |
1 large chopped onion |
1t salt |
1t celery salt |
1/2 t ginger |
1/4 t pepper1/3 c red wine vinegar |
1/3 c unsulphured molasses |
1 c water |
6 carrots peeled & sliced |
1/2 c raisins |
4 c hot cooked rice |
Directions:
1. In a large, heavy Dutch oven add olive oil, beef and sprinkle with the flour and brown on medium high heat. 2. When meat is browned, add tomatoes, onion, spices, molasses, vinegar and water. 3. Cover and bring stew to a boil, then turn heat down to low and simmer for 1 hour. 4. Add carrots and raisins and continue to simmer for another hour till meat is fork tender. 5. Serve in large bowls over hot cooked white rice and enjoy! 6. Goes well with a nice cold Merlot! |
