One of my favourites! Got acquainted with Banoffi when I moved to Ireland. I might just add that I sometimes use this filling and the fresh banana slices and whipped cream as a pancake-filling. Delicious! Ingredients:

125g butter |
250g digestive biscuits, crushed |

175g butter |
175g caster sugar |
425g can condensed milk |
topping |
2 bananas |
1 tablespoon lemon juice |
150ml whipping cream |
25g dark chocolate shavings |
Directions:
1. Base 2. Melt the Butter in as saucepan and stir in the biscuit crumbs. 3. Press the biscuit mixture evenly over the base and sides of a deep 20cm round flan tin. 4. Chill until firm. 5. Filling 6. Put the butter and the sugar in a saucepan and heat gently. 7. Once the butter has melted, stir gently. 8. Stir in the condensed milk and bring slowly to the boil. 9. Lower the heat and simmer for 5 minutes, stirring until the mixture becomes a caramel colour. 10. Pour the filling over the prepared biscuit base and leave to cool, then chill until the mixture has set. 11. Topping 12. Slice the bananas and toss them in the lemon juice. Reserve a quarter of the bananas for decoration and spread the rest over the filling. 13. Whip the cream until thick and spread over the top. 14. Serve decorated with the reserved banana slices and sprinkle with chocolate shavings. 15. (some people do not like the banana slices. So sometimes I puree the bananas and lemon juice and stir it into the filling mixture just before pouring it over base, then top with cream and chocolate) |
