This is a colorful, spicy salad with a lot of different textures and flavors that you will love, if you love chilies! Ingredients:
2 tablespoons butter or margarine |
1 (3-ounce) package chicken or spicy flavored ramen noodles |
2 tablespoons sesame seeds |
1/4 cup sugar |
1/4 cup white vinegar |
1 tablespoon sesame or vegetable oil |
1/2 teaspoon black pepper or 1/4 tsp white pepper |
2 cups cooked chicken, cubed |
1/4 cup dry-roasted peanuts (optional) |
4 medium spring onions, sliced (1/4 cup) |
1 red chili pepper, chopped (remove seeds if you do not want the salad very spicy) |
1 (16-ounce) bag coleslaw mix |
1 (11-ounce) can mandarin oranges segments, drained |
Directions:
1. Melt butter in 10-inch skillet over medium heat. Stir in seasoning packet from soup mix. Break block of noodles into bite-size pieces over skillet; stir into butter mixture. 2. Cook 2 minutes, stirring occasionally. Stir in sesame seed. Cook about 2 minutes longer, stirring occasionally, until noodles are golden brown; remove from heat. 3. Mix sugar, vinegar, oil and pepper in large bowl. Add noodle mixture and remaining ingredients; toss, and serve. |
