Trying out something new Ingredients:
2 (28 ounce) cans chopped tomatoes |
1 (14 ounce) can chopped tomatoes |
1 (14 ounce) can corn |
2 (14 ounce) cans black beans |
2 (14 ounce) cans pinto beans |
2 cups green peppers |
2 small onions |
2 large sweet potatoes |
6 garlic cloves |
2 tablespoons olive oil |
1 tablespoon cumin |
1 tablespoon oregano |
1 tablespoon chili powder |
3 tablespoons tomato paste |
sofrito sauce |
Directions:
1. Heat oil. 2. Add onion and garlic; add green pepper when onion starts to soften. 3. Add sweet potato, peeled and chopped. 4. When onion begins to brown, bang in cans of beans/tomatos and spices. 5. Heat until cooked; add water or broth or tomato paste as needed. |
