Bandit Chicken and Rice Pilaf |

I came up with this after having a large amount of left-over chicken. I did glean some things from other recipes here. But this is a unique recipe, not a copy. Preparation time does NOT include cooking the chicken. Ingredients:
2 lbs cooked chicken, pieces-legs and thighs |
2 cups chicken broth |
1 (6 ounce) box rice-a-roni, rice pilaf |
1 (12 ounce) can mushroom pieces |
1 (12 ounce) can cream of mushroom soup |
1 cup water |
1 cup milk |
1 tablespoon onion powder |
1/2 teaspoon pepper |
1/2 teaspoon lawrys season salt |
4 -5 celery tops |
Directions:
1. In med/large pot, combine broth, water, milk, celery and spices. 2. Bring to a boil. 3. Reduce heat,and remove the celery tops. 4. Then stir in mushrooms and soup. 5. Stir this until mixture ceases to boil. 6. Let simmer while you cook the rice pilaf to 'almost' done in the microwave. 7. Add chicken and rice to pot and cover; cooking on lowest setting for 1/2 hour. 8. Serve with a vegetable or salad. |
