2 tablespoons dark rum or 1/2 tsp. rum extract mixed with 2 tbs, water
3 large ripe bannana's with green tips sliced diagonally
3/4 cup sugar
2 eggs
1 tsp. vanilla extract
1 1/2 cups all purpose flour
3/4 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1/2 cup sour cream
Directions:
1. Heat brown sugar and 1/4 cup butter and cinnamon in saucepan over medium low heat till butter is melted and mixture is smooth 2. stir ocassionally and add rum or extract-pour into round 9x 2 inch cake pan Arrange bannana slices in concentric circle over brown sugar mixture Heat oven 350 degrees beat remaining 1/2 cup butter and sugar in large bowl at medium speed 5 minutes Add Egs one at a time beat well after each addition beat in vanilla 3. Combined flour baking soda salt in medium bowl at low speed beat in flour mixture in three parts alternate with sour cream beginning and ending with Flour mixture.Gently spread batter over bannanas Bake 45-55 min. till cake is golden. cool wire rack 15 min run knife around edges of cake inveret onto serving platter.
