I love bananas... do you? Ingredients:
3 medium sized bananas |
2 teaspoon lemon juice |
1 teaspoon vanilla extract |
4 large egg whites |
3 tablespoon confectioners' sugar plus extra for sprinkling. |
Directions:
1. Preheat oven to 450 F. Spray 4 10 ounce souffle dishes with non stick cooking spray. 2. Mash bananas with lemon juice and vanilla extract 3. In small bowl, with mixer at high speed, beat egg whites until soft peaks form; gradually sprinkle in 3 tablespoons confectioners' sugar, beating until sugar completely dissolves and whites stand in stiff peaks. 4. With rubber spatula, gently fold beaten egg whites into banana mixture, one third at time. 5. Spoon mixture into soufflé dish; set dishes in jelly - roll pan for easier handling. 6. Bake 15 minutes or until soufflés are puffed and brown. |
