Bananas On The Half Shell |

A favorite outside dessert treat after a grilled supper with the tiki torches lit and everyone settling in for a chat. Kids love this and marvel at how fancy a banana can be. Ingredients:
6 bananas, barely ripe, bits of brown flecks in the skin not over ripe |
melted butter |
dash of cinnamon |
light brown sugar |
dark rum optional |
kitchen torch (creme brulee torch) |
Directions:
1. Quarter the bananas, do not peel. Cut crosswise and then lengthwise. 2. Brush lightly with a touch of butter and cinnamon mix 3. Dip the cut half of banana in a flat dish of brown sugar 4. coat thickly with sugar, as evenly as possible 5. Place on a heat proof dish. 6. I line them up in a row on a ceramic casserole dish. 7. Fire up the torch and carmelize the sugar till bubbly and brown. 8. Serve two pieces of banana per person in a shallow dish. 9. Do not add the alcohol to the bananas when the torch is lit or anywhere near the booze. 10. Splash a smidge of rum for the adults and let them spoon away,. 11. For the kids, I wait til they cool enough to handle and peel away the banana peel and put them in a dish with a scoop of ice cream or frozen vanilla yogurt. 12. Alternately you can broil the bananas in your broiler until sugar carmelizes and bubbles. 13. Some have been known to serve this as a condiment to curries. |
