This bread is delicious. Adult version topped with slightly boozy glaze Ingredients:
1-1/2 c mashed ripe bananas |
1 c packed brown sugar |
6 tb butter,melted and divided |
1/4 c cognac or dark rum,divided |
1/3 c plain fat-free yogurt |
2 large eggs |
1-1/2 c flour |
1/4 c ground flaxseed |
3/4 tsp baking soda |
1/2 tsp salt |
1/2 tsp ground cinnamon |
1/8 tsp ground allspice |
cooking spray |
1/3 c powdered sugar |
Directions:
1. Preheat oven to 350' 2. Combine banana,1/2 c brown sugar,5 TB butter and 3 TB cognac in nonstick skillet. Cover over med heat until mixture begind to bubble. Remove from heat;cool. 3. Place banana mixture in large bowl.add yogurt,remaining 1/2 c brown sugar and eggs. Beat with mixer at med. speed. 4. Weigh or lightly spoon flour into dry measuring cups;level with knife. 5. Combine flour and next 5 ingredients in small bowl. Add flour mixture to banan mixture;beat just till blended. Pour batter into 9x5 loaf pan coated with cooking spray. 6. Bake for 1 hour or till pick near center comes out clean. Cool 10 mins on wire rack. Remove bread from pan,place on rack. 7. Combine remaining 1 TB melted buttwer,remaining 1TB cognac and powdered sugar;stir till well blended. Drizzle over warm bread. |
