Got this one while I was living in Canada. It's great for a chilly autumn day, and better yet- it's a piece of cake (or bread?)! Ingredients:
2 bananas, mashed |
1 cup frozen cranberries, chopped |
1/4 cup butter, softened |
1 cup sugar |
2 large eggs |
1 1/2 cups flour |
1 1/2 teaspoons baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
1/2 teaspoon cinnamon |
Directions:
1. Beat together butter, sugar and eggs until creamy. 2. Add bananas and cranberries. 3. Combine the remaining dry ingredients in a separate bowl. Add to the wet ingredients and stir until well mixed. 4. Pour into a large greased loaf pan and bake in a 350 oven for an hour. 5. Remove and cool for 20 minutes in the pan before removing. |
