Banana Zucchini Spelt Bread With Rainier Cherries |

A great low fat loaf which is high in fiber thanks to the spelt and oats! Ingredients:
1 cup all-purpose flour |
1 cup spelt flour |
1 cup rolled oats |
1 1/2 teaspoons baking powder |
1 1/2 teaspoons baking soda |
1 1/2 teaspoons salt |
1 1/2 teaspoons cinnamon |
1/4 teaspoon nutmeg |
1 teaspoon salt |
4 eggs |
1 1/4 cups white sugar |
1/4 cup oil |
1/2 cup applesauce |
3 ripe mashed bananas |
1 teaspoon vanilla |
2 cups shredded zucchini |
1 cup rainier dried cherries |
Directions:
1. Preheat oven to 350 degrees. 2. Mix together flours, oats, baking soda, baking powder, cinnamon, nutmeg and salt. 3. In another bowl beat 4 eggs. 4. Add the sugar, oil, applesauce, vanilla, and mashed banana to the eggs. 5. Combine the west and dry mixtures. 6. Stir untill combined. 7. Fold in zucchini and stir in rainier cherries. 8. Pour into two 2 greased loaf pans. 9. Back untill golden brown and a toothpick comes out clean. Approx 45 minutes. |
