Banana Zucchini Chocolate Chip Muffins |

A very moist and delicious muffin made healthy! Can be made as muffins or as a loaf. Ingredients:
1/2 cup margarine |
222 g unsweetened applesauce |
2 cups white sugar |
5 eggs |
4 mashed bananas |
2 1/4 cups zucchini, grated |
1 teaspoon vanilla |
2 teaspoons baking soda |
2 teaspoons baking powder |
1/2 teaspoon salt |
1 tablespoon cinnamon |
2 3/4 cups whole wheat flour |
2 cups white flour |
1 1/2 cups chocolate chips (optional) |
Directions:
1. Cream first 4 ingredient. 2. Add bananas, zucchini and vanilla to mixture. 3. Mix in baking soda, baking powder, salt and cinnamon. 4. Mix in flours and chocolate chips. Mix until all flour is blended. 5. If making muffins, line muffin tins with paper and spray with no stick cooking spray. 6. For muffins bake at 325 for 18 minutes For loaf bake at 350 for 50 minute. |
