Okay folks, this is the last unique recipe for either banana or zucchini combo breads for a while. My freezer is stocked with a variety of loaves. This is very moist both from the addition of zucchini and yogurt There is no fat or oil in the recipe. Read more . Ingredients:
3 ripe bananas mashed |
2 eggs |
1/2 cup greek yogurt |
2 cups flour |
1 cup sugar |
2 tsp baking powder |
1 tsp baking soda |
1 tsp vanilla |
1 cup shredded zucchini, well drained |
Directions:
1. Beat bananas, eggs, yogurt, vanilla until well blended 2. Combine all the dry ingredients 3. Combine and beat both mixtures well 4. Stir in the zucchini 5. Place batter ( somewhat loose ) in a greased and floured large 9 inch loaf pan( will fill a bit more than 1/2 full ) 6. Bake in middle oven rack, 350 F ,45 minutes OR till tested done in enter in toothpick 7. Allow to cool 10-15 mins in pan before removing to rack to cool completely 8. Wrap in foil and slice the following day 9. This is a very moist |
