i found this recipe in a muffin recipe book, and changed the ingrediants by halving the sugar and oil. It's very yummy and healthy!
Ingredients:
50 g sultanas
3 tablespoons orange juice
140 g plain white flour
140 g plain whole meal flour
1 tablespoon baking powder
60 g caster sugar
2 bananas
100 ml skim milk
2 eggs
3 tablespoons light olive oil
Directions:
1. Put the sultanas in a bowl and add the orange juice, leaving it to soak for about an hour.
2. Preheat the oven to 200 degrees Celsius Sift the flours and baking powder and add any bran left in the seive then stir in the sugar.
3. Mash the bananas and place in a jug. With milk, make up the puree to 200ml.
4. Beat the eggs in a bowl or jug, then beat in the banana and milk mixture, soaked raisins and oil. Add the liquid ingredients to the dry mixture and stir until just combined, being careful not to over-mix.
5. Spoon into a prepared muffin tin, and bake for about 20 minutes. They should be golden brown and firm to touch.
6. Leave the muffins in the tin for about 5 minutes and either serve them warm or place them on a wire rack and let the muffins cool.
