From Veganomicon Ingredients:
1 cup silk unsweetened soymilk |
1 tsp apple cider vinegar |
2 bananas, ripe |
1/3 cup canola oil |
1/3 cup sugar |
1 tsp vanilla |
1 1/4 cup whole wheat pastry flour |
3/4 cup wheat germ |
1 tbsp cinnamon |
2 tsp baking powder |
1/2 tsp salt |
Directions:
1. preheat to 375 & grease muffin tin 2. stir together soy milk and vinegar 3. mash bananas and add soy milk mixture, sugar, oil, and vanilla 4. combine remaining ingredients, then add to wet mixture and stir until dry ingredients are just moistened 5. fill muffin tins and bake 22 minutes |
