Simple, delicious & fluffy muffins. Tip: Blending the wet ingredients in a food processor / blender yields nicer muffins! Ingredients:
245 g self-raising flour |
110 g caster sugar |
50 g light brown sugar |
2 teaspoons baking powder |
1 teaspoon salt |
2 bananas |
1 large egg |
8 tablespoons vegetable oil |
1/2 cup walnuts |
1 teaspoon vanilla essence |
1/2 teaspoon cinnamon |
Directions:
1. Sift the flour into a bowl and add the baking powder, salt, sugar & cinnamon. 2. In a food processor / blender (or in a large bowl) mix the vegetable oil with the bananas, egg, melted butter (cooled) & vanilla essence. Put this mixture in a large bowl. 3. Using as little mixing as possible, add the dry ingredients to the wet ingredients along with half a cup of crushed walnuts. Try to incorporate the ingredients with as little mixing as possible as over-working the batter leads to tougher muffins. 4. Place into muffin cases in a muffin tin and bake in a preheated oven for approx 15 minutes at 180 degrees. 5. This makes approx 6 large muffins but you can make smaller ones if you prefer, which would yield approx 9-12 muffins. |
