Banana Walnut Cookies

Ingredients:
1 1/4 cups brown sugar
1 cup cold margarine, earth balance
3 teaspoons egg substitute, frothed with (ener-g)
4 tablespoons warm water
2 teaspoons vanilla extract
1 large banana, ripe
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
spices, any you choose (optional)
1/2 cup finely chopped walnuts for tops cookie
Directions:
1. Preheat oven to 350 degrees.
2. Lightly grease a couple of cookie sheets.
3. Mix all ingredients except flour and walnuts together in large bowl. Gradually stir in flour.
4. Drop by spoonfuls, about 2 inches apart, onto greased cookie sheets. You will probably have to coax them a little to make them into circles. But, make sure they are still in mounds because they will spread during baking.
5. Sprinkle chopped nuts on top and bake in preheated oven for about 13-15 minutes.
6. Let cool on cookie sheet.
