I made a few substitutions to make this healthier. Can easily be doubled, tripled,etc... and frozen.
Ingredients:
2/3 cup sugar
1/2 cup egg substitute
1/4 cup butter
1/4 cup unsweetened applesauce
1 teaspoon vanilla
1/2 cup plain fat-free yogurt
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup banana, mashed
1/2 cup walnuts, chopped
Directions:
1. Grease 1 large loaf pan.
2. Cream margarine, sugar, eggs and vanilla.
3. Add dry ingredients, then bananas, nuts and sour cream.
4. Mix well.
5. Bake at 350 F for 1 hour.
