I made a few substitutions to make this healthier. Can easily be doubled, tripled,etc... and frozen. Ingredients:
2/3 cup sugar |
1/2 cup egg substitute |
1/4 cup butter |
1/4 cup unsweetened applesauce |
1 teaspoon vanilla |
1/2 cup plain fat-free yogurt |
1 1/2 cups flour |
1 teaspoon baking soda |
1/2 teaspoon salt |
1 cup banana, mashed |
1/2 cup walnuts, chopped |
Directions:
1. Grease 1 large loaf pan. 2. Cream margarine, sugar, eggs and vanilla. 3. Add dry ingredients, then bananas, nuts and sour cream. 4. Mix well. 5. Bake at 350 F for 1 hour. |
