This was originally a turkey recipe. However, it would be fine with chicken, pork or even fish Ingredients:
2 lbs meat, cut in pieces |
1 1/2 cups panko breadcrumbs (or other breadcrumb or coating) |
2 tablespoons butter |
1/2 cup brown sugar |
1/3 cup orange juice |
1/4 cup rum |
1 tablespoon cornstarch |
4 bananas, small and cut in half |
Directions:
1. Preheat oven to 400°F. 2. Coat the mead with the mix, spiced as you like. 3. Arrange in a single layer in and baking dish. 4. In a medium skillet, melt the butter add sugar, stirring constantly until melted. Stir orange juice and rum into cornstarch and whisk together. Gradually add to sugar mixture. 5. Bring mixture to a boil and reduce heat and simmer, stirring constantly until sauce is thick and clear, about 3 minutes. 6. Add banans and cook until heated through, about 1 minute. 7. Place meat on serving plate and pour banana sauce over it. 8. Serve. |
