I got this one from BBC food magazine.I made some changes in the filling as Bananas are my favored fruits.The topping was so different to usual struessel one.Enjoy!! Ingredients:
115 grams/4oz butter, softened |
175 grams/6oz caster sugar |
1 egg |
280 grams/10 oz self raising flour |
125 ml/4 fl oz milk |
3 medium bananas, sliced |
for the crumble |
115 grams/4 oz caster sugar |
85 grams/3 oz plain flour |
finely grated rind of 1 lemon |
50 grams/2 oz cold butter, diced |
1/4 cup walnuts, chopped |
Directions:
1. Preheat oven to 375 F. Butter a 23 cm cake tin. Or you can use a 28x18cm/12x7in oblong cake tin and line with baking paper. 2. beat butter and sugar in a large bowl with an electric hand mixer is pale and fluffy. Whisk in the egg, and then beat in the flour and milk until combined. Spoon in the tin and spread evenly. Arrange bananas over the top. 3. Mix caster sugar, flour and lemon rind in a food processor and then add the butter and pulse until the mixture is crumbly. Sprinkle over the bananas layer and then sprinkle the chopped walnuts over. 4. Bake 55 minutes until the topping is very light golden. Leave to cool in tin completely. |
