2 cups all-purpose flour |
1 cup sugar |
1 teaspoon baking powder |
1 teaspoon salt |
1/2 teaspoon baking soda |
1/2 teaspoon cinnamon |
2 eggs |
1 cup sour cream |
1/4 cup butter or 1/4 cup margarine, melted |
2 medium ripe bananas, , 1-cup (, 1-cup) |
1/4 cup sugar |
3 tablespoons all-purpose flour |
1/4 teaspoon cinnamon |
2 tablespoons butter or 2 tablespoons margarine |
Directions:
1. In a large bowl, combine the flour, sugar, baking powder, salt, baking soda, and cinnamon. 2. In a small bowl beat eggs, sour cream, butter and bananas; stir into dry ingredients just until moistened. 3. Fill greased or paper lined muffin cups three-fourths full. 4. For streusel, combine sugar, flour and cinnamon in a small bowl; cut in butter. 5. Sprinkle over muffins. 6. Bake at 375F for 20 to 25 minutes. |
