This is a classic banana muffin that I added some chocolate chips to and you can top with a cherry and some frosting - banana split without a mess Ingredients:
1/2 cup butter or butter substitute |
1 cup brown sugar |
1 egg |
3 ripe bananas' mashed |
1 cup chocolate chips |
1/2 cup chopped walnuts |
1 1/2 cup flour |
1 tsp baking powder |
1 tsp baking soda |
Directions:
1. Cream butter and sugar add egg. Combine with mashed bananas, flour, basking soda and baking powder. 2. Add chocolate chips and nuts. Place muffins cups into muffin pan or light butter pan if you prefer not to use cups. Divide evenly into 18 and bake at 325 degrees for 35 minutes. 3. Top with a pineapple frosting - 2 cups of confectioners sugar, 2 tbsps. butter (softened), 1/4 cup well drained pineapple (blot to remove all juices) 2- 3 tbsps of cream to make the frosting smooth. 4. Spread with frosting and add a cherry.....enjoy |
