My ex mother in law, gave me this recipe, years ago and I still make it. It is delicious. This recipe does need to be refrigerated overnight. Not really sure why she called it a cake, its more of just a layered dessert. Ingredients:
2 cups graham crackers, crushed |
3 tablespoons sugar |
1/2 cup butter, melted |
2 cups powdered sugar |
1 cup butter |
2 eggs |
20 ounces pineapple, crushed |
4 bananas |
12 ounces cool whip |
10 ounces maraschino cherries |
1/2 cup chopped nuts |
Directions:
1. To make the crust: Melt 1 stick of butter, and add the sugar and graham crackers to make crust. Pat into 9x13 pan. 2. Beat the following items for 10 minutes, powdered sugar, butter, and eggs. Pour onto crust. 3. Drain can of crushed pineapple and layer on top of filling. 4. Slice 4 bananas on top of pineapple. Spread cool whip over bananas. 5. Decorate top with cherries and choppled nuts. 6. Refrigerate overnight. (keep refrigerated if there are leftovers.). |
