Yummy bars to use up those over-ripe bananas. You can also ripen bananas quickly by placing them in the refrigerator for several hours.
Ingredients:
2 cups all-purpose flour
1 cup sugar
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 cup mashed banana (about 2 medium size)
1 (8 ounce) can crushed pineapple, undrained
2 eggs, beaten
1/2 cup canola oil
1 teaspoon vanilla
1/4 cup maraschino cherry, drained, halved
1/4 cup butter
3 tablespoons milk (or 4)
3 cups confectioners' sugar
1 teaspoon vanilla
Directions:
1. Preheat the oven to 350 degrees. Grease and flour a 13x9 pan.

3. Combine the flour, sugar, baking soda, salt and cinnamon in a large bowl. Set aside.
4. In a separate bowl, mash bananas with a fork to make 1 cup. Add pineapple with juice, eggs, oil and vanilla. Stir in cherries.
5. Stir flour mixture into banana mixture, mixing until well combined. Pour into prepared pan. Bake 30 to 35 minute Remove from the oven and let cool 30 minute.

7. Heat butter and milk in a saucepan until the butter melts. Remove from the heat. Stir in the confectioners sugar and vanilla. Beat until smooth. Spread the icing over the bars.
