I found this on Obesity Help. I have not tried this just posting for safe keeping. Ingredients:
1 cup whole wheat flour |
1/2 cup quick-cooking oats |
1 teaspoon baking soda |
1 teaspoon baking powder |
1 teaspoon cinnamon (can add cloves and nutmeg too whatever makes you happy!) |
1/2 cup honey (you can also substitute a sweetener such as stevia-in-the-raw or ideal, but then also add 1/3 cup li) |
3 tablespoons natural applesauce or 3 tablespoons light vanilla yogurt |
2 tablespoons brummel & brown margarine |
4 mashed ripened bananas |
1/2 cup toasted pecans (toasting really helps to bring out the flavor) or 1/2 cup walnuts (toasting really helps to bring out the flavor) |
1 egg |
1 teaspoon vanilla extract |
1/4 cup muesli, opt (to sprinkle on top before cooking) |
Directions:
1. Mix Brummel & Brown and honey (or sweetener of choice) together until creamed. Next add in the egg and beat, add in bananas (if really ripe just add in whole and let the mixer do the work if not mash them in a separate bowl), add in vanilla. 2. In another bowl, stir together all dry ingredients. Add to liquid and stir till just combined. Fold in toasted nuts. 3. Scoop into 12 muffin tins sprayed with nonstick cooking spray. (or can make as a bread in bread loaf). Top with muesli (if you have it). Bake at 350 degrees F for 20 minutes, until cooked through. |
