Banana Rice Pudding

I have not made this pudding myself, but found it in The Mennonite Treasury of Recipes .
Ingredients:
2 1/2 cups sliced bananas
2 tablespoons lemon juice
1 cup sugar
1/8 teaspoon salt
1 tablespoon grated orange rind
3 eggs, separated
1 1/2 cups milk
2 cups cooked rice
Directions:
1. Mash bananas, then add lemon juice.
2. Stir in 2/3 cups sugar, salt, orange rind, egg yolks, milk and rice.
3. Pour into baking dish and set in pan of water.
4. Bake at 350 degF for about 35 minutes.
5. Beat egg whites until stiff and add remaining sugar.
6. Spread over pudding and bake about 15 minutes longer.
