A spin on banana bread using fresh raspberries from the garden. Pretty, delicious and ideal for breakfast or brunch with cream cheese. Hope you enjoy it! Ingredients:
2 large or 3 small ripe bananas, mashed well into a puree |
1 1/2 cup fresh raspberries, crush them to get juicy |
2 cups flour |
2/3 cup sugar |
2 tsp baking powder |
1/2 tsp baking soda |
dash salt |
2 eggs |
1/3 cup softened butter, margarine or white vegetable shortening |
1 tsp vanilla |
Directions:
1. Cream fat and sugar until fluffy 2. Beat in the eggs and vanilla 3. Combine flour, salt, baking powder and baking soda 4. Add flour mix alternately with mashed banana to creamed mixture 5. Stir in raspberries with its juice 6. Place in a greased and floured loaf pan ( 9 x 5 ) 7. Bake 350F oven about 1 hour or until tested done in the center 8. Remove to rack 9. Cool completely 10. Best served if wrapped and allowed to mellow overnight 11. Note: slice and served with softened cream cheese or butter 12. Looks pretty and tastes wonderful! |
