Its tea time again! this is the one to eat with your tea or coffee. Ingredients:
225g (8oz) self raising flour |
2.5ml (1/2 teaspoon) salt |
100g (4oz) butter |
175g (6oz) dark brown sugar |
75g (3oz) seedless raisins |
2 ripe bananas |
2.5ml (1/2 teaspoon) |
1 egg beaten |
45ml (3 tablespoons) milk |
2.5ml (1/2 teaspoon) vanilla essence |
Directions:
1. Preheat oven 160c /gas 3 2. Grease and line a 2lb (1kg) loaf tin 3. Put flour and salt into a bowl, cut the butter into pieces and rub into the flour until it resembles fine breadcrumbs 4. Stir in the sugar and raisins. 5. Mash the bananas and blend into the mixture with the vanilla essence, beaten egg and milk 6. Beat until well mixed and turn into the prepared tin 7. Cook for approximately 1 1/2 hours until golden brown with a springy texture 8. Cool in the tin for 10 minutes then cool on a wire rack 9. serve alone or with butter |
